Perfect for weeknights, or any night, this sausage, white bean, and kale skillet is keto / low-carb, and bursting with flavor. Pretty great for having just 5 ingredients! Hint: it also makes for a great breakfast.

Sausage, White Bean, and Kale Skillet
1 can white beans, drained
3-4 sweet Italian pork sausage, remove casing (or around 1 lb of the ground stuff)
optional: top with fried eggs, parmesan cheese, and hot pepper flakes
Drain and rinse one can of white beans (great northern or cannellini).
Remove the sweet Italian sausages from their casings and crumble into a nonstick skillet with some olive oil over medium-high heat, breaking up any large pieces with a fork.
When sausage is almost cooked through, about five minutes, add beans and toss until warm. If the beans and sausage get dry, add a splash of white wine or chicken stock.
Add a big handful of shredded kale until slightly wilted.
Top with a drizzle of extra virgin olive oil, shaved Parmesan, a squeeze of lemon, and crushed red pepper flakes, if you crave some heat.
Optional: top with fried or poached eggs.
